Crafted with bold character and refined balance, The Highland Bold blends exceptional coffees from three remarkable origins. The standout is the washed Honduran component, sourced from the pioneering COMSA collective.
The COMSA cooperative is known not only for its exceptional coffee but for its progressive approach to sustainable farming and education. With a focus on enriching communities, they operate a multilingual school that equips children and young adults with the tools to thrive.
Their meticulous washed process begins with hand-selecting only the ripest, deep-red cherries. After evening deliveries to the central wet mill, cherries are rested overnight to initiate natural fermentation. Come morning, the cherries are carefully de-pulped and the beans are dry-fermented for 24 hours before being washed and sun-dried for up to 8 days. The result: a clean, caramel-sweet profile that brings structure and elegance to the blend.
